Responsibilities
• Prepare and assemble sushi dishes with meticulous attention to detail, maintaining consistency and presentation standards
• Execute traditional sushi techniques such as knife skills, poaching, braising, grilling, and food handling to create authentic flavors
• Plan and develop menu items that reflect seasonal ingredients and customer preferences while adhering to recipe specifications
• Operate kitchen equipment safely and efficiently, including knives, rice cookers, sushi rollers, and other specialized tools
• Maintain strict food safety sanitizing procedures and uphold hygiene standards in all aspects of food production
• Assist in training junior kitchen staff on sushi preparation techniques and food safety protocols
• Support high-volume production needs during busy service hours while ensuring quality control
Skills
• Extensive culinary experience with a focus on sushi or Japanese cuisine, demonstrating mastery of knife skills and food handling techniques
• Proven background in fine dining environments or high-volume restaurant settings emphasizing quality presentation
• Strong knowledge of food safety management practices and sanitizing procedures within a professional kitchen
• Experience with menu planning, recipe adherence, and meal preparation tailored to customer preferences
• Familiarity with operating kitchen equipment safely and efficiently in a fast-paced setting
• Ability to work collaboratively within a team while maintaining high standards of cleanliness and organization
• Previous experience in catering or food service roles that require precise food production and serving skills
